Whole Roasted Chicken – This is the foundation of our chicken. Whole chickens are best, as chicken feet, legs, and leftover chicken carcasses will result in less chicken in the soup. Alternatively, you can use a combination of chicken breast or other bone-in or meaty cuts.
Vegetables for soup – Onions, garlic, celery and carrots are all you need.
Shiitake Mushrooms – These can be substituted with other types of mushrooms or mixed mushrooms. Consider using adaptogenic mushrooms instead, such as Reishi, Chaga, Cordyceps, Lion’s Mane, and Turkey Tail to help your body restore a healthy balance.
